DOUBLE FERMENTATION
Expertly produced by small farmer Luis Minas in the Antigua region of Guatemala, this single-origin is a blend of three varietals bourbon, caturra, and catuai. We ferment the ripe cherries in water for 48 hrs then we pull them out and finish the processing using the natural method, which involves a slow drying phase in our drying beds for 3 weeks.
We pick up these flavors: tropical fruity notes, hints of chocolate covered citrus with bright acidity and full body.
